			<content:encoded><![CDATA[<p>The site Living Off the Grid has countless tips on everything from solar cooking to composting.  There&#8217;s also a piece on their efforts at homemade cheesemaking.  But you don&#8217;t need to be completely self-sufficient in order to enjoy making cheese at home.  As you may have already seen, cheesemaking is very much a process of trial and error.<span id="more-78"></span></p>
<p>Check out their cheese press (or the instructions for making your own).  They also suggest Ricki Carroll&#8217;s book &#8220;Home Cheese Making&#8221; that contains 75 recipes.</p>
<p>Here&#8217;s an excerpt from their cheesemaking experiences:</p>
<blockquote><p>&#8220;I had already made several batches of soft cheese (mozzarella) that came out beautifully using recipes from this cheesemaking book, but my first attempt at a hard cheese resulted in something that I didn’t dare attempt to eat. I think my failure had to do with the fact that I didn’t follow the exact instructions from the recipe book. This time I followed the Farmhouse Cheddar recipe step-by-step, even going so far as to dechlorinate the water that I used to dissolve the rennet tablet. Below is the result of my efforts, although I still have to wait another 24-hours for it to dry enough to be put into cheese wax. It will be put up to age for one month after waxing. I can’t wait to try it!&#8221;</p></blockquote>

			<content:encoded><![CDATA[<p>Once you&#8217;ve mastered the basics of cheese rennets and curds, it&#8217;s time to branch out to make different types of cheese.  With the right ingredients and equipment, blue cheese is fairly easy to make at home.<span id="more-49"></span></p>
<p>In basic cheesemaking, you know how to form the curds.  At this point in making blue cheese, an inoculum is added to the mixture.  This can take the form of penicillium or some blue cheese itself.  The purpose is to help the ripening and blooming of the cheese. There are many types of penicillium, but we suggest penicillium roqueforti, used to make Gorgonzola and Roquefort cheeses.</p>
<p>Next, load the curds into the cheese press overnight. The next day, remove the cheese and prepare it to aerate and ripen by drilling holes in the cheese. Place it in a 50F refrigerator with high humidity.</p>
<p>Over the next two months, turn the cheese 45 degrees daily. Eventually a white bloom on the surface of the cheese.  After about 2-3 months, remove the cheese from the refrigerator and slice it open.  You&#8217;ll see the beautiful blue and green marbling.  The longer it sites in the refrigerator, the more marbling you&#8217;ll see.   Bon appetit!</p>

Cheesemaking, the art of making cheese at home, has come, and with today&#8217;s technology and the availability of equipment, the process easily becomes an enjoyable, simple, and even rewarding hobby.<span id="more-14"></span></p>
<p>The process of cheese making mainly requires 3 things:</p>
<ul>
<li> Milk</li>
<li> Basic kitchen skills together with the recipe steps, and</li>
<li> The necessary materials and other ingredients for the process</li>
</ul>
<p>The Milk</p>
<p>It is important to take note that the milk to be used in cheese making is pasteurized only, not ultra-pasteurized and certainly not homogenized. Ultra-pasteurized milk will not produce a cheese of good quality because it would be quite impossible for the curd, the starting material for the cheese, to form.</p>
<p>If you cannot find the required milk for cheese making, try this process: mix dry milk powder with water, with the instructions on the box carefully followed, to make one gallon of milk then add one pint whipping cream and 1/2 tsp calcium chloride. The resulting product is just as delicious and satisfying.</p>
<p>The milk needed can be brought from any supermarket and grocery stores but if it is not available on the store nearest you, you can start requesting the grocer to provide the appropriate milk needed in cheese making.</p>
<p>The Materials</p>
<p>Cheese making doesn&#8217;t only require the ingredients. Of course, there are also equipments to be used. For starters, books on how to make cheese at home give the essential information and recipes needed to make a good quality cheese.</p>
<p>Other than that, there are also certain materials and equipment that are important in the process of cheese making. These includes cheese cloth, cheese coloring, presses, sanitizers and cleaners, cheese molds, stainless stockmats, pH tester, thermometers and drying mats. <p>Significantly, some ingredients are crucial in cheese making. These ingredients are acids and salts, lipase powders, rennet, bacterial starter cultures, and even mold cultures.</p>
